Jalapeno peppers are eaten fresh in many cuisines, but are also commonly pickled. The fresh peppers are used to make a variety of tasty favorites like salsa. They are often roasted and then referred to as a chipotle. They are very common in Mexican dishes and are used for dishes such as chili.
